Saltbox was created out of a simple need. During the pandemic, our sister restaurant Gander and Ryegrass needed a way to serve great food that could travel. That idea quickly grew into its own identity. Saltbox became more than just a solution. It became a local favorite.
With the same level of care and ingredient integrity as Gander and Ryegrass, we created a casual concept that Spokane could rely on. Saltbox continues to reflect the values we care about most—honest food, warm hospitality, and a strong connection to the people we serve.
